Claire Vallée is known for winning, in 2021, the first Michelin star for a fully plant-based restaurant, with ONA in Arès (Gironde). After closing that restaurant in 2022 and travelling for several years, she chose Trentemoult for a new start.

She bought and renovated a house in the village, with a small garden for her herbs. Since 5 June 2026, she welcomes six people around one large table. There is no shop front and no sign: the address is given when you book.

The current meal is called "Metazoa". It is about the animal world but uses no animal products at all (no meat, fish, eggs or dairy), with organic or local produce. It lasts three to four hours, in a setting made with local artists and craftspeople. The menu costs 210 euros, plus 70 euros with the matching drinks.

Speaking to France 3 at the end of September, the chef said the start has been hard: at the end of August she had already posted an appeal on Instagram because there were too few bookings. She still says she believes in the project. Bookings are made online on Claire Vallée's website.
